The sauce recipe included is an easy, yet delicious one. Feel free to use any sauce you prefer.
For best results, let the dough rise slowly in the refrigerator for 2-3 days.

Ingredients
450 grams Bread Flour
355 grams Water
1 tbsp Sugar
1/2 tbsp salt
1/2 tbsp Instant Dry Yeast
- Sauce
1 28 oz can crushed tomatoes
2 tbsp olive oil
1 tsp sugar
1 tsp dried oregano
1 tsp red pepper flake
1/4 cup finely grated parmesan or Romano cheese
- Toppings
8-12 oz shredded mozzarella (more or less to taste)
Various toppings of your choice to taste
Directions
- Add salt, sugar and yeast to water and stir until yeast is fully dissolved.
- Slowly stir in flour until fully incorporated (about 5 minutes).
- Cover and let rise for 1-2 hours at room temperature or for up to 3 days in the refrigerator.
- Punch down dough to degas.
- Gently pull dough from edge of bowl and fold on top. Continue to do this while rotating bowl until all dough is folded to the middle (see video below).
- Gently dump dough into a well oiled 12 x 12-inch (or similar sized) baking pan.
- Slowly and gently press dough toward edges of pan. When dough won’t spread any further without rebounding, cover and let rest for 10 minutes, then try again.
- Once dough is spread mostly to the edges of the pan, cover and let rise for 1 hour.
- Use your finger tips to gently make indents in the dough.
- Top with sauce, shredded mozzarella cheese and toppings of your liking.
- Place pan onto lowest rack of preheated 500 degree oven and bake for 20 minutes or until topping just begin to brown.
